So, as some of you may know from watching my Instagram stories or maybe just previous episodes

of this podcast, I have been Elbow's Deep in learning how to make hard cheeses this year.

And when I say Elbow's Deep, that's literally because when you make a four gallon batch

of cheese, you know, sometimes you're stirring with your hand and you're literally up to

your elbows in way and curves and it's everywhere in the kitchen and it gets sticky.

Anyway, that has been my life the past few months ever since our cow had her baby.

You may recall from my YouTube video, our calf actually died about two weeks after it

was born.

We don't know why it died, but normally I have our calf to help us consume this large quantity

of milk.

And it has always taken the pressure off of me to deal with that milk.

Well, when our calf died, all of that milk now was something that I had to deal with.

And we do have a bottle calf that helps us a little bit, but still we get six gallons

The bottle calf might drink two gallons maybe and that gives me four gallons a day of milk

that I need to do something with.

I'm not going to pour it out.

It's an amazing, nutritious resource.

And so I was like, you know what, Jill, now is your time.
