And the reason is because it will lower the internal temperature of the breast as when you're, the turkey sitting out for a little while while you're getting the smoker or the roasting pan ready and the oven's coming up to temperature of the smoker.

It will lower the temperature of the rest because the white meat will cook quicker than the dark meat. And so if you place a gallon Ziplog bag of ice on the breast,
