Dr. Berg talks about enzymes and cooked foods and raw foods. Enzymes speed up the chemical reactions in the body and without this, everything would be way too slow.

The heat will destroy enzymes and make things preserved to sit on the shelf longer, however, it also lowers the nutrition and forces our body to have to make enzymes to do its job.
