This is the season when people have a lot of green tomatoes on their hands, and they resent

them.

And I can't figure out why, because you can do things with a green tomato.

You can't do with the red one. In salads, for instance. I mean, green tomatoes, they're tart.

They've got kick. They've got beautiful crunch. Red tomatoes just squish.

And you can do, for instance, a green tomato meringue pie? And how about a pasta with raw

green, crunchy tomatoes, and

brown sugar, chili glazed

bacon, all tossed

with ricotta? And yeah,

if you must, you can ripen the things
