So yesterday Jill you were talking about you know get the right equipment and that's

just one of the first steps and it's pretty overwhelming I have to say when you look

at all these different methods dehydration which kind of canning do I use.

Oh if I use this lid am I in trouble that type of thing.

So what would you say is the bare bones basics for someone to start out with?

I think the first thing is to decide which method of food preserving you're going to use.

And for me I knew that canning was number one both water bath canning and pressure canning.

So with canning you're going to need jars.

I mean that's kind of a given.

So you want to make sure and have jars most of the time I'm usually I'm using regular

mouth pint jars but you also can have wide mouth and you can have quartz which come

in regular and wide mouth.

And then if you score any canning jars at garage sales and things like that you'll discover

old ones that come in all sorts of sizes and shapes but anyway you want jars.
