0:39.4	I'm absolutely delighted and excited, as you can tell, to be chatting with you today
0:44.2	about my passion, which is culinary medicine.
0:47.6	This is so interesting because I think I've had a cardiologist on the show.
0:52.6	We've never had a cardiologist who's a chef.
0:55.1	So to start with how does that work together and how did that happen?
1:00.0	I've got to say and pat myself on the back a little bit, I am the one and only.
1:04.2	And also I teach culinary medicine at the University of Montana.
1:09.4	So I'm a professor of culinary medicine as well.
1:12.1	So those sorts of vetting and credentials, you just won't find anywhere else because nobody has
1:18.0	them. And so I think that kind of contributes along with my personal journey to kind of a unique
1:23.0	viewpoint on food and health and the food experience relationship because it's not just about
1:29.6	nutrition and biochemistry and physiology, which I certainly appreciate from the medical,
