In this episode of The Ready State Podcast, we’re joined by Dr. Kevin Hall—one of the world’s leading metabolism researchers and a longtime NIH scientist—for a wide-ranging conversation on what the research actually says about weight loss, energy balance, and the modern food environment.

Dr. Hall explains what we’ve learned from real-world and tightly controlled studies, including his work following The Biggest Loser contestants, and why exercise doesn’t fully prevent the metabolic adaptations that can accompany major weight loss. We also unpack why “calories in, calories out” is both true in principle and often misunderstood in practice, how ultra-processed foods can drive overeating, and what GLP-1 medications may be changing in appetite biology.

The episode also touches on Dr. Hall’s departure from a 21-year career at the NIH, following the censorship of his team's findings on ultra-processed foods when they didn’t align with preferred narratives—an experience he describes as chilling for scientific communication.

Finally, we explore the practical challenges of doing high-quality nutrition research, why confident opinions can outpace the data, and what it will take to better understand—and ultimately prevent—diet-related chronic disease.

What You'll Learn in This Episode
  • Why metabolism isn’t “broken” — and why larger bodies burn more calories at rest
  • What the Biggest Loser study actually revealed about weight loss and regain
  • Why exercise doesn’t “save” your metabolism during extreme dieting
  • How ultraprocessed foods change how much people eat — without acting like addictive drugs
  • Why calories in vs. calories is often misunderstood in practice
  • How genetics and environment interact to shape body weight
  • What GLP-1 drugs are really doing — and what they don’t fix
  • Why nutrition science is underfunded, politicized, and desperately needed

If you just looked at my PhDs in, you'd say, what the heck is this guy talking about nutrition,

0:04.5

science and metabolism? Because I have a PhD in physics of all things.

0:07.9

What was the most surprising thing you learned? Did the exercise prevent this learning metabolism?

0:12.8

The answer was absolutely not.

0:14.4

So that was just a little clip of Dr. Kevin Hall, who we are so excited to have on the Ready State

0:19.5

podcast. And he is a world-renowned

0:23.5

nutrition researcher. And he focuses on sort of the drivers, drivers of obesity and

0:31.4

chronic disease as it relates to nutrition. Yeah, you know, when we think diet, what we tend to always think about is,

0:40.1

I just need to lose some weight, right?

0:42.0

And we're not thinking about what environment is the person in, what food choices we're making.

0:47.7

It's just like, hey, calories in, calories out.

0:49.8

I just eat fewer calories and I'll lose weight.

0:52.8

We're not talking about performance. We're not talking about performance. We're not talking

0:54.9

about health. We're not talking about the impacts of these big systems on the individual's choice

1:01.0

or lack of choice to have access to foods that change how they eat and even just what happens

1:07.0

when they eat. Yeah. And Dr. Hall literally has been on the forefront of this research for the last 20 years working at the NIH. He just came out with this amazing book called Food Intelligence, which I highly recommend to anyone who's sort of interested in like, you know, the real, the real science behind nutrition and what we do and actually don't understand. It turns out as complicated. And those absolutes, I think, if you're listening into this podcast, you're like, absolutes, you're not going to get them. But you're going to

1:31.3

really talk about the complexity of doing nutrition research and some of the surprising inputs,

1:38.3

outputs of some of these experiments been running, like The Biggest Loser. Yeah. And I mean,

1:43.3

if you follow nutrition advice from anyone, like, you know, Dr. Hall's research

1:48.9

is really like at the basis of so much of our thinking and understanding about nutrition

1:53.4

and obesity and that related to disease.

1:55.6

And he really is the kind of the person who's done the research on ultra-processed foods.
