The idea for this episode has come from this new dessert I've been enjoying in Palo Alto.

At this place called True Food Kitchen. Shout out to True Food Kitchen at Stanford Shopping Center.

Really healthy food, really great stuff.

And they have this dessert called flowerless cake.

Cake. It's like gluten free, dairy free, all the stuff free that you want to be free and it works absolutely delicious.

And when I go through it my usual tendency when eating food I've been like this ever since I was a kid,

I would just eat very quickly.

I don't know why.

Maybe it's being an Italian family. I won't impose that on the Italians, let's just say my Italian upbringing.

They just tend to go through meals really quickly. I get a lot of satisfaction out of eating

relatively quickly. Not so quickly that it looks ridiculous but I'm definitely

not a slow eater and that carries into my desserts as well.

And I've always had a bit of a complicated relationship

with mindful eating for that reason,

because I've felt like I get a lot of satisfaction from just going through the meal quickly in a strange way.
