brisket that I got up at 5 a.m. for coming out too rare. So as I informed Marshall and our producer,

Jeff, I might need to take a brisket break. I've got my wireless thermometer so I can see the

temp on my phone. And when it hits 185 internal, I have to go upstairs and wrap it. The good thing is,

once I do that, then I'm set for the next four hours or whatever, five hours. So we'll see you in

that comes along, though. Marshall has threatened to just do the show without me and not edit out

the part that I'm gone. But you know what? That's your show. Yes, yeah. So, and I'm also threatened to

So there's basically the way I'm cooking the brisket's two stages. The first stage is uncovered

where I've moistened it about every hour or so and until it hits 185. And then you take it out,

you wrap it in butcher paper, you put it back in until it hits 205. So I'm okay. I got up so early,

so I could get to the second stage without it being too late in the day. Sounds good. Well,
