One of the reasons the consumption of ultra-processed foods is associated with the higher risk

0:11.2

of disease is food additives, like artificial colors and flavors, sweeteners, emulsifiers,

0:16.6

and more, as I talked about in my last video.

0:19.6

But at least they're listed in the ingredients on the label, so you can avoid them if you wanted

0:23.8

to. Unlisted are some of the sneakier ways ultra-processed foods can be bad for you, like

0:29.4

contaminants formed during industrial processing methods.

0:33.3

For example, there's acrylene, a toxin found in cigarette smoke that's also generated during

0:38.8

the cooking or frying of food with fats or oils, so it can be found in foods like potato

0:43.4

chips, french fries, donuts.

0:45.3

Ironically, canola oil, considered to be perhaps the most quote-unquote heart-healthy type

0:50.5

of oil, appears to generate the highest amounts of acrolean, and acrolean may cause

0:55.4

cardiovascular disease and probably causes cancer too. In fairness, acrolean would still be a problem,

1:02.0

even if you made French fries from scratch, which would be considered a minimally processed food,

1:07.2

rather than ultra-processed frozen fries or fast-food fries. But if every time you wanted to have fries, you had to cut up potatoes yourself and

1:14.6

deep fry them, we'd probably eat a lot fewer fries.

1:19.6

Fried and pre-fried foods may also be contaminated with 3 MCPD,

1:24.6

another possible carcinogen, fiorans and acrylamide or two other heat-generated

1:30.5

contaminants that are possibly or probably cancer-causing.

1:34.3

Trans fats are produced in the refining process to make vegetable oils, so they may end up

1:39.7

as high as half a percent trans fats.

1:42.9

In fairness, even unprocessed meat and dairy products naturally

1:46.2

have a lot more, without much difference between unprocessed and ultra-processed products.
