In Jamaica, the people who escaped slavery and carved out independent communities in the island's

rugged interior were called maroons.

They settled deep in the cockpit country, a region so

dense, so full of hills and valleys, that it was nearly impossible for enslavers to follow.

There, the maroons lived alongside the island's indigenous Taino people, trading, sharing, and

blending traditions. Out of that connection came one of the country's most beloved creations,

Jamaican Jerk.

Now, Jerk isn't just a flavor.

It's a method.

A mix of peppers, scallions, garlic ginger, pimento thyme, and cinnamon

used to season smoke and grill meat until it's tender and bursting with spice.

With this method, the maroons hunted wild boar and other tough cuts and transformed them

into something extraordinary. But here's what's really remarkable. They found a way to cook

without being caught. They couldn't risk the smoke of an open fire giving away their location,

so they wrapped their meats in pepper elder leaves and cooked them underground in smokeless pits
