Yeah, it's fairly straightforward. We harvest in bud so the flower is still closed and we'll go through the rows and you

squeeze each one and you don't want to be shy about it and if it's soft like a

marshmallow then it's pretty much ready to go.

If it's hard kind of like a marble, then you want to leave it to cook a little bit more.

So we'll just go through each row, and we've got early, mid, and late varieties purposefully because we want the longest
