I was eating at a barbecue joint, not far from the state line.

My cousin had insisted that this joint serves the best barbecue in the state of Georgia,

and he made me promise to try it, so I did.

I ordered the ribs, and I ate them without sauce.

Back when I was judging barbecue competitions in my career, the true test of ribs we learned is to eat them dry, because something else you also learn, as a barbecue contest judge,

is that barbecue sauce is like a beautiful woman. If she's too sweet,

she's hiding something. But if she's too spicy, they're going to be sorry in the morning.

Take it from me. Behind me in this barbecue joint was a young couple eating, twenties maybe late teens even i could overhear their

conversation the young man said quietly has your mom texted yet they were eating a massive plate of smoked

meat no she hasn't said the young woman.
