My question is, if you had to add one POV, non-prolog or epilogue, from the first five books,

Also, if we had an additional POV and WINS, which one would you choose? Good question. I think it fits this episode that's so much about the Terrell's and that I think the kind of the obvious part of the story that is missing a POVU character is House Terrell, especially as they become more and more prominent as you go through a storm of swords and a feast for crows. Obviously, we see a little bit of them in the first two books.
