today is Captain Kans, and you may notice that we're in different climbs this time.

We're in Rocco Steakhouse, 57th Street

off of Park Avenue. Fifty-seven Street off a Park Avenue. There's two locations in the city,

one down on Madison Avenue between 27th and 28th. I've been there many times. It's my first time

at the new location up in 57th off a park. And we had a wonderful experience so far.

I had mentioned briefly that Cons is going to be my co-host for this whole thing.

And on top of it, we just did a big video on what exactly dry aging the steak is.

I mean, it was kind of familiar with the process beforehand.

We were lucky enough to have Chef Dominic come in and walk us through from soup to nuts.
