Everybody, it's Chris. Got a new interview for you today with Limor Goren. She is a doctor.

She is a researcher. She is a cancer researcher, actually. She has a PhD in molecular biology.

Her research centers on one of the most important anti-inflammatory molecules found in olive oil.

If you've been following me for a while, you know this is called oleocanthal. I talk about it in my first book. I talk about it in my cookbook. Olio canthal

is the anti-cancer compound in olive oil, at least one of them. And maybe the most important one, Dr. Gorin discovered one of

the mechanisms by which oleocanthal is toxic to cancer and show that olive oils that are rich

in oleocanthol are an effective strategy to kill various types of cancer cells. And not all olive oil

has high levels of oleocanthal. In fact, some olive

oils basically don't have any at all. So we'll talk about all that. Dr. Goren, thank you

for taking the time to do this. Oh, thank you so much, Chris, for having me on the show. I was

looking forward to talking to you for a long time. Oh, that's great. So how did you get into olive oil?

How did you decide to research this molecule or this, you know, started with a food product?

Right. It pretty much fell on my desk, on my lab bench, quite literally.

I was working on my PhD, and I was working in a cancer lab at a research university at Hunter

College in New York City.

And our lab centered on a seller mechanism called the mTOR pathway,

which I'm sure you're familiar with. And we're looking at upstream signals that activate the

mTOR pathway, which is very often dysregulated in cancer.

And before we move on,

would you explain the significance of the M-Tor pathway to my audience? Oh, sure, sure.

So M-Tor is a master regulator of growth and proliferation.

Kind of the cellular dormant or cellular control center that gets signals from different nutrients.
