| 0:34.2 | to see how many foods have added colorings. And I'm not just talking about rainbow colored |
| 0:39.9 | cereals or other garishly tinted items. I'm talking about things like yogurt, cheese, gravy, |
| 0:46.6 | and crackers, foods that don't look colored at all. For example, a blue dye might be added |
| 0:53.3 | to make white frosting look whiter. You might also have wondered about the names of these |
| 0:59.0 | ingredients. They're a little odd. The synthetic dyes approved by the FDA for use in foods are |
| 1:03.8 | identified by number as in yellow number five or blue number one. And then that word lake |
| 1:10.6 | indicates that the straight dye has been mixed with a mineral salt so that it's insoluble |
| 1:16.2 | in water. So the straight dyes are generally used in drinks and other liquid products, |
| 1:21.4 | and the lake colors are used in baking and other solid foods. But why? Why are we adding so much |
| 1:28.0 | color to our food? You know, we may think that we don't want anything unnatural in our food, |
| 1:33.6 | but studies of consumer preference repeatedly show that foods that are enhanced with synthetic |
| 1:39.4 | coloring are more appealing than foods made without coloring, or even those made with natural |
| 1:45.2 | colorings. The color actually affects how we perceive the taste. So macaroni and cheese made with |
| 1:53.0 | yellow dye tastes creamier and cheesier than the all natural brands with no color added or |
