How are you doing today?

Hey, Russ. Doing well on a rainy Saturday afternoon where I'm at. It is rainy. I'm in New Hampshire. Now, you're down. Are you in

Massachusetts, Paul, or Rhode Island, I forget. Yeah, I'm in Boston. So, Boston, right. So it's raining

there too. Yes, it's just a rainy day here in New England. But hopefully it will stop this afternoon because I have to spatchcock a chicken on my smoker. And so that's not fun to do in the rain. I'm just throwing that out there. No, no, it's not. I'm doing the inside hobbies sitting at the painting desk on the computer. See, that's smart. So I have this thing. So I got this. This is just a complete aside, but it's sort of an achievement in gaming, but it's more of an achievement in barbecue. So over the summer, my wife for Father's Day gave me a Trigger Smoker, which is this really easy to use. I mean, it's probably cheating. Most barbecue pit masters will be like, that's totally cheap. But it's easy to dump some pellets on one side. And it just smokes your food. And so I've been experimenting. So we decided this year we wanted to try to smoke a turkey for Thanksgiving, which as we're recording this is next week. And so, you know, in all of my wife's travels, because she goes in these different things for the automotive stuff she does. She meets all these folks and she runs into occasionally these barbecue folks. And so one of the people she ran into is like, hey, you know, you should do. You got to spatchcock the turkey when you smoke it because it just comes out way better and it's more even. And so I'm like, I don't know how to spatchcock anything and she's like

well test it on chicken so so this week my mission is to spatchcock chicken and experiment with that

so that I'll be ready to spatchcock the turkey next week so this is one of my big missions Paul

have you ever spatchcocked a bird before? Yes, I have. And no lie, it does,

it does wonders for, it does wonders for the cooking, you know, as far as, as far as time,

ability to spice, not having things dry out, you know, because things go, you know, because you've got to go too long because, you know, so, yeah, it thumbs up to spatch cocking. Yeah, exactly. And that, then spatch cocking is a, fun to say, but be it, it just flattens the bird out if you're not familiar with this. You're basically cutting down the, the, the center line of the, of the breast and the backbone, and and then you're flipping it you're flipping it on it

sort of flat out um it's also a cool cool like battle cry like spatchcock like i feel like we can put

that on the side of like a rhino or something it would look awesome so just to bring it back to

gaming there ball exactly and it is a cool it is a cool word to say because folks that don't know what it is, look at you funny and wonder. Oh, yeah. What about like squad spatchcock? You know, it makes me after my Star Wars Legion. I make a little squad spatchcock. All right. Well, I mean, I was seeing space marine banners, but yeah, that works too. Well, you know, well, it, it seems like, like it's, it'd be like a stealth squad because you want to lie low, right? You don't want to raise up. You want to lie low, squad spatchcock. Yeah. All right. So, Paul, before we get into it, now, since you obviously are a Captain Con, are you like, behind the scenes Captain Con guy, Captain Con Gu, Captain Con,

Playmaker, like, what do you consider yourself? How would you describe yourself? What's your title or

role at Captain Con there? Oh my goodness. Chief Cook of bottle washer sounds trite, but

I guess the short, the short bio for folks is I'm one of one of the four founders of Captain Con.
