It's Spring 1894.

Dr. John Harvey Kellogg and his brother Will are racing up the steps

of the Battle Creek Sanitarium as a distant clock tower strikes midnight.

It's finally Sunday. They've spent all of Saturday itching to get back to work.

Now the Adventist Sabbath is over.

That means they're finally free to get back to work on their latest project,

creating cereal as we know it.

The Kellogg brothers scurry down the Sanitarium's cordverse,

pass the treatment rooms and into the kitchen.

On the work surface, it sits a ball of beige wheat dough that will made on Friday.

By now they worry it's lost its freshness, but they're too frugal to throw it away.

Will rolls up his shirt sleeves and starts kneading the dough.

A few minutes later, John returns to his side.

Okay, the oven's lit. Let's roll it out.

The pair head to the crank operated rolling machine at the end of the table.

John feeds the sticky dough through the machine.

As he turns the crank, the roller slowly squeezed the mixture into a thin sheet.

As the sheet oozes forth, Will crouches down and starts shaving.

Raise your thin slices of dough with a large knife.

Suddenly John stops and sniffs the air.
