It was March 2016 and 23-year-old Marcelo Sus had just started a small, hummus and falafel

delivery business in his hometown of Montevideo, Uruguay.

For the first time, Marcelo went shopping at Mercado Modelo, the city's giant fruit and

vegetable market, in search of fresh ingredients for his new business.

They were a huge place with more than 500 fruit and vegetables and more than 6,000 people

walking around there every day.
