The story I'm about to tell will, I hope, fill you with optimism and give you a taste of that

can do spirit.

I encountered this guy.

I can't actually remember where, who told me that he was going to make sausages and

bacon and other types of charcois me one day but first he was going to travel around and

then I kept bumping into him and he'd done loads of traveling but never seemed to ever make a sausage.

And so it became a joke to us. Is he ever going to make any? He's never going to make anything.

And then eventually some sausages emerged and they were pretty good, but there

were hardly any of them. Almost suddenly this business emerged that now supplies us with all the

bacon that we sell here, the

sausages that are made specially for us. So everything that he told me that we

were deeply cynical about turned out to be true. So I've got immense faith in him now.

He's a kind of hero of my own.

Restreatur Simon writes hero is the central character in this program.

In fact, it's the story of a guy and his partner who both came

through and succeeded. They learned a foodcraft and rejuvenated a food tradition, getting it right in so many ways.

They are 2016's best food producer in the BBC Food and Farming Awards,

Charcutie limited in South Wales. A producer who had to impress people not

easily impressed, including judges Angela Hartnett and Yottam Ottelengi.
