She reveals what she really thinks about diners who behave badly.

Don't stack the plates. Just don't stack the plates. I just, I hate it so much.

Wait, diners stack the plates? Diner stack the plates because they think they're being helpful.

And they kind of push it off to the side because they're like,

ugh, we don't want these dirty dishes in front of us anymore.

Plus, she shares stories from Top Chef, including her winning mushrooms. I sweat down some aromatics, garlic shallots, thyme, de-glaze with a little bit of

vermuth, finished with some butter, sherry vinegar, fresh parsley, salt, pepper. Perfect.

God, that sounds good. I want $10,000 for those, by the way.
