| 1:02.0 | Well, in America, 60% of the wheat is red wheat. |
| 1:06.0 | Now what is red wheat? |
| 1:07.4 | Compared to certain countries in Europe, they use white wheat. |
| 1:10.7 | So red wheat is soft, it's fluffy, it has a longer shelf life, it has a lot more carbohydrate |
| 1:17.2 | and it has much more protein, specifically gluten. |
| 1:22.3 | The wheat that they use in Europe has much less gluten, that's the protein in wheat |
| 1:27.7 | that causes a lot of the problems in the gut, but that's not the only difference. |
