Set your oven to 425 and in an oven-safe dish layer spinach (fresh or frozen), tomatoes (small or quartered), garlic cloves (one per person), and ricotta cheese (¼ cup per person). Drizzle the whole thing with olive oil, put a lid on the dish, and bake for 30 to 40 minutes. Boil your pasta while it bakes.
