So for the last few years, Bon Appetit Magazine has made its test kitchen videos

really into the equivalent of must-watch TV, and they've made legit stars out of their test cooks,

like Claire Saffetz, Andy Baragani, and Priya Krishna.

And the head lady in charge of the kitchen for all that time was Carla Lali Music.

She's the food editor at large for Bonap and the author of Where Cooking Begins.

A cookbook that's really about making the most of your pantry without stressing out about it.

And so we figured she's the perfect person to talk to you right now.

Carla Lolly Music, how are you doing? I'm good. How are you doing? I'm okay. I'm okay. I mean,

at this point, it's like, you know, there's a lot of new normal going on. But yeah, I'm doing

okay. I made, um, I made mole the other day. Um, I didn't make the mo okay. I made mollay the other day.

Nice.

I didn't make the mole.

But I ordered moly paste from Galegeza, which is like this fantastic Wahakan restaurant in L.A.

And they packaged their paste in these jars.

And now I have four cups of extra molle just like hanging out in my fridge.

That's awesome.

Right.

I mean, you know that feeling, right?

Yeah, that's a treasure trove.

Just like this level of comfort I have, like whatever happens, I can go into the fridge and there's molle.

Like, that's amazing.
