We've been talking a lot about cooking this week and today we're going to talk about

perhaps some things to avoid when you are cooking produce and I'm certain I've probably

Well you're not alone Kevin I've made all of these mistakes myself as well so you don't

have to feel bad but learning how to do this better has transformed the way that I cook

in the kitchen and I think it will help your listeners as well so the first one is crowding

the vegetables that you cook.

I think this is really a product of wanting to get through the kitchen and the prep process

faster so we toss everything into the pot or toss everything into the pan without really

thinking about the effect of what that's going to do when we do that and the problem with

crowding is that we are going to be steaming our vegetables instead of using the high heat

that we're likely actually trying to apply to our food so if you're trying to saute something

if you're trying to caramelize or brown like we talked about in some of the earlier conversations

if you're trying to do that when you put too much vegetable in the pot what happens is

all the liquid that's inside of those vegetables and now has to go somewhere it starts to evaporate

out of the vegetables and then that is what's cooking the vegetables that are next to it
