Hey there, can you guess the number of onions that are currently growing in my garden right now?

Well, I'll take a guess with you because I lost count at about 300.

I think there's probably between 300 and 400 if I'm not mistaken.

And yes, that is a lot of onions for a family of four.

But onions are always a huge part of my garden plan because

we eat onions. Like a lot of families, we eat a lot of onions. The onions that I grow and harvest from

my garden, they will store for a couple of months whole, but then they also freeze well,

and I have learned that I really enjoyed dehydrating them.

If you were on my webinar last week, then you know we talked a lot about onions,

and then if you listened to the podcast episode last week, preserving obviously is a huge

part of the reason I grow my garden.

My goal has always been to have a year-round supply of onions, and so far I haven't quite been

able to make it, although last year I came the closest than I ever have before. You would think,

after hearing me say that I have 300 or so onions growing in my garden, that I've got this onion

thing figured out. But in fact,

it's quite the opposite. The whole reason I grow that many onions is because I can't be

guaranteed that I'm going to have the harvest that I want. I am still every year on a quest to find

that perfect key that unlocks the perfect onion harvest.

I've got a lot of crops dialed in pretty well.

Tomatoes, peppers, okra, the list could go on.

But I'm being quite honest with you and that onions are ones that I'm still trying to figure out.
