Summary

Whole grains are promoted as the cornerstone of a healthy diet by authorities like the USDA, the American Heart Association, and the Food Guide Pyramid.

There's just one problem: Grains are also the leading cause of heart disease, especially modern crops like wheat and corn.

When Dr. William Davis came to this shocking realization, he began conducting research and later published the New York Times best-selling book Wheat Belly, which then turned into a series of books.

Dr. William Davis is a cardiologist, best selling author, and the medical director and founder of the Wheat Belly Lifestyle Institute.

With this work, he defied the traditional set of nutritional guidelines and beliefs that embraced grains and shunned fat.

His research showed that fats weren't responsible for heart attacks, but grains were. When he put patients on a grain-free diet, their markers for heart disease went down and they experienced other perks like faster weight loss, reduced joint pain, and improved mental clarity.

So you are a trained as a cardiologist, correct?

That's right. Starting out in what's called interventional cardiology, number of years back, which is all the heart procedures.

Okay, great. So you are also one of the first people to be outspoken against grains and wheat in our diet.

Can you just tell us a little bit about that and kind of how you made the discovery and went through that and how it reflect maybe in your practice?

Yeah, this goes back a little over 20 years ago when we set up what was called a heart scan device, CT heart scan device actually was the original heart scan device, which was called the electron beam tomography device, an eBT device or what some call an ultra fast CT because the hearts moving object.

And if you want to measure plaque, if you want to precisely quantify atherosclerotic plaque in the car and arteries, these arteries are about three millimeters wide.

They're actively moving. So it's very difficult to measure plaque, precise and track it over time.

Well, this device was the first device that could do that.

We started track a lot of people, thousands of people in my area, the Milwaukee area is one of the first scanners in the country.

And it became clear that when you put when you do the conventional things put people, this is 20 some years ago, put people on statin drugs, aspirin, beta blocker, cut their fat, exercise, all that stuff.

It does not work. It's a miserable other failure. We help publish some of those data and to remain to ever since you can throw all the statin drugs you want, for instance, at people's heart scan scores, but the score will increase 25 to 30% per year.
