Now have you ever struggled to describe the flavour of something?

Well Marian Bruce has faced that very challenge.

She owns a small farm in Perthshire, which she manages for the

benefit of nature. And she also has her own botanical drinks company called Highland Boundary, Wild

Distillery. Now, she's passionate about using wild flavours in her products, and she's come up

with a clever way of describing what they taste like

by categorising them in a wild flavour wheel. Eager to find out more, I joined her on her farm

near Elith. The distillery came out of lots of different bits of information. It was absolutely

kind of a rewilding project from the start.

But when we started putting things back, we realised that if we were careful, if we were

conscious of the way that we harvested and only took a little bit from lots of lots of plants,

that actually we could create products that were absolutely of the landscape. So flavours that are in the landscape.

And the first product that we released was a birch spirit.
