Now I love Florence Fennell and it's one of my favourite vegetables.

I like it raw. I like it cooked and always try and grow it as well as I can, but it's quite tricky. And it's the

trickiness that I like about it. And the secret is, as with so many vegetables, is to grow it fast

and not have any kind of break in its growth pattern. It responds to heat, but also needs quite a lot of water because it can bolt.

And once it starts to bolt, you lose that bulb, that fleshy base of all the leaves, and that's it.
