about your career journey so far and what inspired you to focus on sustainability in particular.

Yeah. Well, I've always been interested in food

and I always knew I wanted to go into the career of being a dietitian.

But what really captured my attention was the mad cow disease epidemic during the 90s.

Because this led me to think, what is happening?

Why are people consuming these animals and getting CJD? And why cow's getting

mad cow disease anyway? Why are they being fed spinal cords? Surely they should be being fed
