Had a bunch of people over, cooked two turkeys.

Well, one was a smoked turkey that we then just really just reheated.

And then the other was a full turkey breast, which I kind of opened and flattened and cooked it that way. Like spatchcocked?

Do you spatch cocked it? Yes. And, yeah, it turned out great. And what's crazy is I had no

idea how long I was going to take to cook, right? Yeah. So I literally, I literally just figured,

you know, a couple, two and a half, three hours, and then

opened it up, stuck a thermometer in it. And it was like maybe, I don't know, 10 degrees less than

what it should have been. So I just put it back in for like 15 minutes and put it in, put the thermometer back in it.

And yeah, it was perfect.
