There's three ways that fiber is classified.

We have soluble versus insoluble.

We have fermentable versus non-fermensible.

And then we have viscous versus non-viscous.

When we look at insoluble versus soluble, the insoluble fiber, if it's insoluble,

it kind of stays in that classification.

If it's soluble, then it will be further classified based on viscosity.

So soluble fiber can be really viscous or not so viscous.

And viscous means the texture that this fiber will produce when it's mixed with liquid.

So a more viscous fiber will produce a more gel-like structure when it's mixed with liquid.
