Here's a great story on the founding of the Kogi truck from chef Roy Choi.

We allowed ourselves to finally open up because we had nothing to lose.

Yep.

Every single person in Kogi in the beginning was jobless.

We were all fired or lost their jobs or laid off.

So what was that night you were starting to talk about?

So we have this taco.

When we did the prototype, we all looked at each other. There was about the same

amount of us in the room when we looked at each other. We were just like, what the fuck? You know,

we unlocked something and we were possessed. So from that moment, we just shopped, prepped, and we

went out to the club. So we went to the club at 2 a.m. This was November. And the night we opened, I remember it was in front of the arc light, the Cinerama

Dome, because there's a club there called Green Door. And it was the night that twilight opened.
