0:37.8	You've got a new book on Champagne, which is really your,
0:41.0	in a way your life's work, I think. This is true. And in terms of champagne literature, in terms of
0:47.4	what's out there already, what did you desire? What did you see as necessary to make?
0:50.9	There's a lot of good stuff written.
0:54.2	I think that much like the Champaign industry itself,
0:57.9	maybe in the latter part of the 20th century
1:00.6	things got a little bit formulaic. In my experience with Champaign, you know, having been working with Champaign for 20 years,
1:07.0	I have seen the region change dramatically in that time.
1:11.0	So I guess what I really wanted to do was write a book from a very
1:16.4	contemporary perspective, write a really 21st century champagne book. If the
1:22.4	20th century was about winemaking in Champaign, the 21st century is really about the
1:27.4	vineyards. It's about vineyards in terms of Terwar, specificity of place. It's about vineyards in terms of viticulae. vine are really
1:45.0	mastered the art of making wine.
