think about wines in Germany. What we consider to be the classic wines of

Germany, the Pratak categories laid out in the German wine laws of 1971,

the Cabotles, Bélès, and Ause-Lisez, as we all know.

These are still thriving,

but some winemakers are keen to make wines that interface better

Wines that are clearly dry, even if their sugar levels at harvest, could put them in
