Some of the most passion-led careers are driven by impactful stories, and today's guest, Mark Waits, is no different. Mark went from a data analyst to a (freaking amazing) chef, and he works in fine diningin Houston, TX. He also provides meal prep for the Houston area, caters events, and is a certified personal trainer that has been in the fitness world for 10 years. After developing a negative and slightly disordered relationship with food by swinging the fitness + health pendulum a little too far, Mark found himself at rock bottom with his relationship with food, but he USED rock bottom to bounce back. 

Today we're talking about Mark's journey and how he's re-ignited his love and passion for food, and found the meeting of the Venn diagram of loving food and loving health + fitness. I'd say it's a fairly even mixture of like sunny and pleasant and cool and crisp

with like melancholy and dreary and I will say I love a good melancholy day.

Every now and again, like the mood is just right. Lana Del Rey just came out with a new album.

Like it fits. You know what I mean? Sometimes you just need that.

And it's like a permission slip to just sit where the cozy blanket and comfy clothes

with a nice cup of coffee, you know, and a good book.

Also, something I am identified about myself. I jogged my own memory with the coffee comment.

I am a strange individual and I barely drink iced coffee at all in the summer.

Like hardly at all when it's actually you know hot outside.

I just have my hot cup of coffee in the morning. That's it or I'll do a matcha instead

or I'll do a mud water just kind of depends on the vibe for the day or I'll even

do like an herbal tea just depends again on the vibe for the day.

But there's something about fall when it's already getting cooler outside

where you would think logically that I would want to have hot coffee

because it's cooler outside, but no.

It's like my brain wants to augment the coldness of the outside

and like make me even colder so that we can really just embrace the chill.
